A tender and flavorful beef roast cooked to perfection in a crock pot, ideal for family dinners or meal prep.
Ingredients

- 3 to 4 pounds beef roast (chuck or round)
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 4 cloves garlic, minced
- 1 cup beef broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Sear the beef roast on all sides until browned, about 3-4 minutes per side.
- Transfer the seared beef roast to the crock pot.
- In the same skillet, add chopped onion and cook until softened, about 2-3 minutes. Add minced garlic and cook for another minute.
- Pour beef broth and Worcestershire sauce into the skillet, scraping up any brown bits from the bottom. Pour the mixture over the roast in the crock pot.
- Add sliced carrots and diced potatoes around the roast. Sprinkle dried thyme, salt, and black pepper on top.
- Cover the crock pot and cook on low for 8-10 hours or on high for 4-6 hours, until the beef is tender and easily shredded with a fork.
- Once cooked, remove the beef roast and let it rest for a few minutes before slicing. Serve with the vegetables and broth, garnished with fresh parsley.
Notes
- Feel free to add other vegetables such as celery or mushrooms.
- For extra flavor, consider adding a bay leaf or rosemary.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
