- 3 to 4 pounds beef chuck roast
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 carrots, cut into chunks
- 4 potatoes, cut into chunks
- 1 onion, quartered
- 4 cloves garlic, minced
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season the beef roast with salt and pepper and sear on all sides until browned, about 4-5 minutes per side.
- Place the carrots, potatoes, onion, and garlic in the bottom of the crock pot.
- Transfer the seared beef roast to the crock pot on top of the vegetables.
- In a bowl, mix together the beef broth, Worcestershire sauce, thyme, rosemary, and bay leaf. Pour over the roast and vegetables in the crock pot.
- Cover and cook on low for 8 to 10 hours or on high for 4 to 6 hours, until the meat is tender and easily shreds with a fork.
- Remove the roast from the crock pot and let it rest for a few minutes before slicing. Serve with the vegetables and cooking liquid.
Notes
- For added flavor, you can marinate the beef roast overnight with the seasoning before cooking.
- Feel free to add other vegetables such as celery or parsnips based on your preference.
- If you prefer a thicker gravy, remove the cooking liquid and thicken it on the stove with a cornstarch slurry.
