Ingredients

  • 3 to 4 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 carrots, cut into chunks
  • 4 potatoes, cut into chunks
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season the beef roast with salt and pepper and sear on all sides until browned, about 4-5 minutes per side.
  2. Place the carrots, potatoes, onion, and garlic in the bottom of the crock pot.
  3. Transfer the seared beef roast to the crock pot on top of the vegetables.
  4. In a bowl, mix together the beef broth, Worcestershire sauce, thyme, rosemary, and bay leaf. Pour over the roast and vegetables in the crock pot.
  5. Cover and cook on low for 8 to 10 hours or on high for 4 to 6 hours, until the meat is tender and easily shreds with a fork.
  6. Remove the roast from the crock pot and let it rest for a few minutes before slicing. Serve with the vegetables and cooking liquid.

Notes

  • For added flavor, you can marinate the beef roast overnight with the seasoning before cooking.
  • Feel free to add other vegetables such as celery or parsnips based on your preference.
  • If you prefer a thicker gravy, remove the cooking liquid and thicken it on the stove with a cornstarch slurry.
