- 2 lbs beef chuck roast, cut into chunks
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, cubed
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a skillet over medium-high heat. Season the beef chunks with salt and pepper, then brown them in the skillet for 3-4 minutes on each side.
- In the crock pot, add chopped onion, minced garlic, sliced carrots, and cubed potatoes.
- Place the browned beef on top of the vegetables.
- In a separate bowl, mix together the beef broth, Worcestershire sauce, thyme, and rosemary. Pour this mixture over the beef and vegetables in the crock pot.
- Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender.
- Adjust seasoning with additional salt and pepper if needed and serve warm.
