Ingredients

  • 2 lbs beef chuck roast, cut into chunks
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, cubed
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season the beef chunks with salt and pepper, then brown them in the skillet for 3-4 minutes on each side.
  2. In the crock pot, add chopped onion, minced garlic, sliced carrots, and cubed potatoes.
  3. Place the browned beef on top of the vegetables.
  4. In a separate bowl, mix together the beef broth, Worcestershire sauce, thyme, and rosemary. Pour this mixture over the beef and vegetables in the crock pot.
  5. Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender.
  6. Adjust seasoning with additional salt and pepper if needed and serve warm.
