A hearty and comforting crock pot beef stew that simmers all day for deep flavor and tender meat.
Ingredients

- 2 lbs beef chuck roast, cut into 1-inch cubes
- 4 medium carrots, sliced
- 3 medium potatoes, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 2 teaspoons dried thyme
- 2 bay leaves
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a skillet over medium-high heat. Add the beef cubes and brown on all sides, then transfer to the crock pot.
- In the same skillet, add onions and garlic, sauté until translucent. Add to the crock pot.
- Add carrots, potatoes, beef broth, red wine, tomato paste, Worcestershire sauce, thyme, bay leaves, salt, and pepper to the crock pot.
- Stir to combine all ingredients.
- Cover and cook on low for 7-8 hours or high for 3-4 hours, until beef is tender.
- Remove bay leaves before serving. Enjoy your hearty beef stew!
Notes
- You can add other vegetables like peas or green beans for extra nutrition.
- For a thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and add it to the stew during the last 30 minutes of cooking.
