Instructions
- Preheat oven to 450°F.

- Drain potatoes and let them dry for 5 minutes.
- Place potatoes on a baking sheet and gently smash them with a fork or masher.
- Drizzle with olive oil, salt, and pepper.
- Roast for 25-30 minutes until crispy.
- Mix butter, parsley, thyme, and garlic in a bowl.
- Spread herb butter over hot potatoes before serving.
