Ingredients

  • 1 lb (450g) squid, cleaned and cut into rings
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1 cup buttermilk
  • Vegetable oil, for frying
  • 1/2 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Rinse squid rings and pat dry with paper towels.
  2. In a bowl, mix flour, salt, pepper, paprika, and garlic powder.
  3. Dip squid rings in buttermilk, then coat in the flour mixture.
  4. Heat oil in a deep pan to 375°F (190°C).
  5. Fry squid in batches for 2-3 minutes until golden brown.
  6. Drain on paper towels.
  7. For the dip, mix mayonnaise, lemon juice, lemon zest, garlic powder, salt, and pepper in a small bowl.
  8. Serve calamari hot with the lemon dip.
