- 1 lb (450g) squid, cleaned and cut into rings
- 1 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1 cup buttermilk
- Vegetable oil, for frying
- 1/2 cup mayonnaise
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Rinse squid rings and pat dry with paper towels.
- In a bowl, mix flour, salt, pepper, paprika, and garlic powder.
- Dip squid rings in buttermilk, then coat in the flour mixture.
- Heat oil in a deep pan to 375°F (190°C).
- Fry squid in batches for 2-3 minutes until golden brown.
- Drain on paper towels.
- For the dip, mix mayonnaise, lemon juice, lemon zest, garlic powder, salt, and pepper in a small bowl.
- Serve calamari hot with the lemon dip.
Notes
- Do not overcrowd the pan to ensure even frying.
- Serve immediately for the crispiest texture.
- Substitute buttermilk with regular milk and a squeeze of lemon if needed.
