- 2 boneless, skinless chicken breasts
- 1 cup breadcrumbs
- 1/2 cup grated parmesan cheese
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 egg, beaten
- 1/2 cup marinara sauce
- 1/2 cup shredded mozzarella cheese
- 2 medium potatoes, diced
- 2 tbsp butter, melted
- 1 tsp minced garlic
- 1 tbsp chopped parsley
Instructions
- Preheat oven to 400°F (200°C).
- Mix breadcrumbs, parmesan, garlic powder, oregano, salt, and pepper in a bowl.
- Dip chicken breasts in beaten egg, then coat with breadcrumb mixture.
- Place chicken on a baking sheet and bake for 20 minutes.
- Remove chicken, top with marinara sauce and mozzarella, then bake for another 5 minutes.
- Toss diced potatoes with melted butter, minced garlic, and salt.
- Spread potatoes on a separate baking sheet and roast for 25 minutes, stirring halfway.
- Sprinkle potatoes with parsley before serving.
Notes
- Use panko breadcrumbs for extra crispiness.
- Add red pepper flakes for a spicy kick.
- Fresh basil makes a great garnish.
