Description

Crispy breaded chicken schnitzel made easily in the air fryer for a healthier version of the classic dish.


Ingredients

  • 4 chicken breasts (about 1.5 lbs)
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs
  • 1 tbsp mustard
  • 1/4 cup all-purpose flour
  • cooking spray or oil

Instructions

  1. Pound chicken breasts to an even thickness (about 1/2 inch).
  2. In one bowl, mix breadcrumbs, Parmesan, paprika, garlic powder, salt, and pepper.
  3. In another bowl, whisk eggs and mustard.
  4. Coat each chicken piece in flour, then dip in egg mixture, and finally press into breadcrumb mix.
  5. Preheat air fryer to 375°F (190°C). Lightly spray the basket with oil.
  6. Place breaded chicken in the air fryer in a single layer. Cook for 10-12 minutes, flipping halfway, until golden and crispy.
  7. Check internal temperature reaches 165°F (74°C). Serve hot.

Notes

  • For extra crispiness, spray the breaded chicken lightly with oil before air frying.
  • Use panko breadcrumbs for a crunchier texture.
  • Let the chicken rest for 2-3 minutes after cooking for juicier results.
