Description
Crispy breaded chicken schnitzel made easily in the air fryer for a healthier version of the classic dish.
Ingredients

- 4 chicken breasts (about 1.5 lbs)
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs
- 1 tbsp mustard
- 1/4 cup all-purpose flour
- cooking spray or oil
Instructions
- Pound chicken breasts to an even thickness (about 1/2 inch).
- In one bowl, mix breadcrumbs, Parmesan, paprika, garlic powder, salt, and pepper.
- In another bowl, whisk eggs and mustard.
- Coat each chicken piece in flour, then dip in egg mixture, and finally press into breadcrumb mix.
- Preheat air fryer to 375°F (190°C). Lightly spray the basket with oil.
- Place breaded chicken in the air fryer in a single layer. Cook for 10-12 minutes, flipping halfway, until golden and crispy.
- Check internal temperature reaches 165°F (74°C). Serve hot.
Notes
- For extra crispiness, spray the breaded chicken lightly with oil before air frying.
- Use panko breadcrumbs for a crunchier texture.
- Let the chicken rest for 2-3 minutes after cooking for juicier results.
