Description
A classic creme brulee recipe with a rich custard base and caramelized sugar topping.
Ingredients
Scale
- 2 cups heavy cream
- 1 vanilla bean (or 1 tsp vanilla extract)
- 5 large egg yolks
- 1/2 cup granulated sugar (plus extra for topping)
- Pinch of salt
Instructions
- Preheat oven to 325°F (160°C).
- Heat cream and vanilla in a saucepan until simmering, then remove from heat.
- Whisk egg yolks, sugar, and salt in a bowl until pale.
- Slowly pour hot cream into the egg mixture while whisking.
- Strain the mixture into ramekins and place them in a baking dish.
- Fill the dish with hot water halfway up the ramekins.
- Bake for 30-35 minutes until set but slightly jiggly.
- Chill for at least 2 hours.
- Sprinkle sugar on top and caramelize with a torch or broiler.
Notes
- Use room temperature eggs for even mixing.
- Cover with plastic wrap to prevent skin forming while chilling.
- Serve immediately after caramelizing the sugar.
