Description

A hearty and flavorful white chicken chili made with tender chicken, white beans, and a creamy broth. Perfect for a cozy meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, cubed
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 can (4 oz) diced green chiles
  • 1/2 cup sour cream
  • 1/2 cup shredded Monterey Jack cheese
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic. Cook until softened, about 3 minutes.
  3. Add chicken, cumin, oregano, salt, and pepper. Cook until chicken is no longer pink, about 5 minutes.
  4. Stir in white beans, chicken broth, and green chiles. Bring to a simmer.
  5. Reduce heat and cook for 15 minutes, stirring occasionally.
  6. Remove from heat. Stir in sour cream and cheese until melted.
  7. Garnish with cilantro before serving.

Notes

  • For extra heat, add a pinch of cayenne pepper.
  • Serve with tortilla chips or warm bread.
  • Leftovers can be stored in the fridge for up to 3 days.
