- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, cubed
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cans (15 oz each) white beans, drained and rinsed
- 4 cups chicken broth
- 1 can (4 oz) diced green chiles
- 1/2 cup sour cream
- 1/2 cup shredded Monterey Jack cheese
- Fresh cilantro, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic. Cook until softened, about 3 minutes.
- Add chicken, cumin, oregano, salt, and pepper. Cook until chicken is no longer pink, about 5 minutes.
- Stir in white beans, chicken broth, and green chiles. Bring to a simmer.
- Reduce heat and cook for 15 minutes, stirring occasionally.
- Remove from heat. Stir in sour cream and cheese until melted.
- Garnish with cilantro before serving.
Notes
- For extra heat, add a pinch of cayenne pepper.
- Serve with tortilla chips or warm bread.
- Leftovers can be stored in the fridge for up to 3 days.
