- 1 lb shrimp, peeled and deveined
- 1 lb chicken breast, diced
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken and cook until browned, about 5-7 minutes. Remove and set aside.
- In the same skillet, add shrimp and cook until pink, about 2-3 minutes per side. Remove and set aside.
- Add garlic and sauté for 30 seconds until fragrant.
- Pour in heavy cream and bring to a simmer.
- Stir in sun-dried tomatoes, spinach, Parmesan, and Italian seasoning.
- Return chicken and shrimp to the skillet and simmer for 2-3 minutes.
- Season with salt and pepper to taste.
- Serve hot over rice or pasta.
Notes
- Use fresh shrimp for best results.
- Adjust creaminess by adding more or less heavy cream.
- Substitute spinach with kale if preferred.
