- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1/2 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 cup fresh spinach
- 1/4 cup sun-dried tomatoes, chopped
- 1 tsp Italian seasoning
Instructions
- Season chicken breasts with salt, pepper, and garlic powder.
- Heat olive oil in a skillet over medium-high heat.
- Cook chicken for 6-7 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add heavy cream, chicken broth, and Parmesan cheese. Stir until smooth.
- Add spinach, sun-dried tomatoes, and Italian seasoning. Simmer for 3-4 minutes until spinach wilts.
- Return chicken to the skillet and coat with the sauce. Simmer for 2 more minutes.
- Serve hot.
