- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon Italian seasoning
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- Fresh basil, for garnish
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sun-dried tomatoes, heavy cream, chicken broth, and Italian seasoning. Stir to combine and bring to a simmer.
- Add the fresh spinach and cook until wilted, about 2-3 minutes.
- Stir in the grated Parmesan cheese until melted and smooth.
- Return the cooked chicken to the skillet, coating it with the creamy sauce. Cook for an additional 2-3 minutes to heat through.
- Remove from heat and garnish with fresh basil before serving.
