Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Fresh basil, for garnish

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the sun-dried tomatoes, heavy cream, chicken broth, and Italian seasoning. Stir to combine and bring to a simmer.
  5. Add the fresh spinach and cook until wilted, about 2-3 minutes.
  6. Stir in the grated Parmesan cheese until melted and smooth.
  7. Return the cooked chicken to the skillet, coating it with the creamy sauce. Cook for an additional 2-3 minutes to heat through.
  8. Remove from heat and garnish with fresh basil before serving.
