Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup spinach, chopped
  • 1/4 cup sun-dried tomatoes, sliced
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt and pepper, then cook for 6-7 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, add garlic and sauté for 30 seconds.
  4. Pour in chicken broth and scrape any browned bits from the pan.
  5. Add heavy cream, Italian seasoning, and Parmesan cheese. Stir until smooth.
  6. Bring to a simmer, then add spinach and sun-dried tomatoes. Cook until spinach wilts.
  7. Return chicken to the skillet and coat with the sauce. Serve hot.

Notes

  • For a lighter version, substitute half-and-half for heavy cream.
  • Add extra Parmesan cheese for a richer flavor.
