Ingredients

  • 2 tablespoons Olive oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cans (28 ounces each) Canned crushed tomatoes
  • 2 cups Vegetable broth
  • 1 cup Heavy cream
  • 1/2 cup Fresh basil, chopped
  • to taste Salt
  • to taste Black pepper
  • 4 slices Bread slices
  • 4 slices Cheddar cheese, sliced

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until softened, about 5 minutes.
  2. Stir in minced garlic and cook for an additional 1 minute until fragrant.
  3. Add canned crushed tomatoes and vegetable broth to the pot. Bring to a simmer and cook for about 20 minutes.
  4. Remove from heat and stir in heavy cream and chopped basil. Use an immersion blender to blend the soup until smooth. Season with salt and pepper to taste.
  5. For the grilled cheese, heat a skillet over medium heat. Butter one side of each slice of bread.
  6. Place two slices of bread, buttered side down, in the skillet. Add a slice of cheddar cheese on top of each. Top with the remaining bread slices, buttered side up.
  7. Cook until golden brown and crispy, about 3-4 minutes per side, flipping once. Repeat with remaining bread and cheese.
  8. Serve the creamy tomato basil soup hot with grilled cheese sandwiches on the side.
