Description
A comforting and creamy tomato basil soup paired perfectly with gooey grilled cheese sandwiches.
Ingredients

- 2 tablespoons Olive oil
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 2 cans (28 ounces each) Canned crushed tomatoes
- 2 cups Vegetable broth
- 1 cup Heavy cream
- 1/2 cup Fresh basil, chopped
- to taste Salt
- to taste Black pepper
- 4 slices Bread slices
- 4 slices Cheddar cheese, sliced
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until softened, about 5 minutes.
- Stir in minced garlic and cook for an additional 1 minute until fragrant.
- Add canned crushed tomatoes and vegetable broth to the pot. Bring to a simmer and cook for about 20 minutes.
- Remove from heat and stir in heavy cream and chopped basil. Use an immersion blender to blend the soup until smooth. Season with salt and pepper to taste.
- For the grilled cheese, heat a skillet over medium heat. Butter one side of each slice of bread.
- Place two slices of bread, buttered side down, in the skillet. Add a slice of cheddar cheese on top of each. Top with the remaining bread slices, buttered side up.
- Cook until golden brown and crispy, about 3-4 minutes per side, flipping once. Repeat with remaining bread and cheese.
- Serve the creamy tomato basil soup hot with grilled cheese sandwiches on the side.
