- 2 boneless, skinless chicken breasts
- 1 cup sliced mushrooms
- 2 cups fresh spinach
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 bunch asparagus
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp butter
Instructions
- Preheat oven to 400°F.
- Toss asparagus with 1 tbsp olive oil, salt, and pepper. Roast for 15 minutes.
- Heat remaining olive oil in a pan over medium heat. Cook chicken until golden, 5-6 minutes per side.
- Remove chicken and sauté mushrooms in the same pan for 3-4 minutes.
- Add spinach and cook until wilted.
- Stir in heavy cream, Parmesan, garlic powder, and butter. Simmer for 2-3 minutes.
- Return chicken to the pan and coat with the sauce.
- Serve with roasted asparagus.

- Substitute heavy cream with coconut milk for a dairy-free option.
