Ingredients

- 500g minced meat (beef or chicken)
- 2 large potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, chopped
- 1 liter chicken or vegetable broth
- 200ml heavy cream
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
Instructions
- Heat olive oil and butter in a large pot over medium heat.
- Add onions, garlic, carrot, and celery. Cook until softened.
- Add minced meat and cook until browned.
- Stir in diced potatoes, salt, pepper, and thyme. Mix well.
- Pour in the broth and bring to a boil.
- Reduce heat and simmer for 20 minutes or until potatoes are tender.
- Stir in heavy cream and simmer for another 5 minutes.
- Adjust seasoning if needed and serve hot.
Notes
- Use lean minced meat for a lighter version.
- Add more broth if you prefer a thinner soup.
- Garnish with fresh parsley before serving.
