- 8 oz pasta
- 1 lb shrimp, peeled and deveined
- 1 lb baby potatoes, halved
- 1/2 cup pesto
- 1/2 cup heavy cream
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Toss potatoes with 1 tbsp olive oil, salt, and pepper. Roast for 25 minutes until golden.
- Cook pasta according to package instructions. Drain and set aside.
- Heat remaining olive oil in a pan over medium heat. Add garlic and shrimp, cook until shrimp turns pink (2-3 minutes per side).
- Reduce heat to low. Stir in pesto and heavy cream. Mix well.
- Add cooked pasta and roasted potatoes to the pan. Toss to coat.
- Sprinkle with Parmesan cheese before serving.
Notes
- Use fresh or frozen shrimp—thaw if frozen.
- Substitute half-and-half for heavy cream for a lighter version.
- For extra flavor, top with fresh basil or red pepper flakes.
