Description
A rich and creamy soup inspired by the classic beef stroganoff. Made in one pot for easy cleanup.
Ingredients

- 1 lb beef sirloin, thinly sliced
- 2 tbsp butter
- 1 onion, diced
- 8 oz mushrooms, sliced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup sour cream
- 2 tbsp flour
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 8 oz egg noodles
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Melt butter in a large pot over medium heat.
- Add beef and cook until browned. Remove and set aside.
- In the same pot, sauté onion and mushrooms until soft.
- Add garlic and cook for 30 seconds.
- Stir in flour, then slowly add beef broth.
- Bring to a simmer and add egg noodles. Cook until tender.
- Return beef to the pot. Stir in sour cream, mustard, and Worcestershire sauce.
- Season with salt and pepper. Garnish with parsley before serving.
Notes
- For a thicker soup, use less broth.
- Substitute Greek yogurt for sour cream if preferred.
- Cook noodles separately if making ahead to avoid mushiness.
