Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 3 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup broccoli florets
  • 1 cup carrot slices
  • 1 cup green beans, trimmed
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Season the chicken breasts with salt and pepper. Add them to the skillet and cook for 6-7 minutes on each side until golden and cooked through.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add minced garlic and sauté for about 1 minute.
  5. Stir in the heavy cream and Dijon mustard, mixing until well combined. Let it simmer for 2-3 minutes until slightly thickened.
  6. Return the chicken to the skillet and coat it with the creamy mustard sauce. Cook for another 2 minutes.
  7. Meanwhile, steam the broccoli, carrots, and green beans until tender, about 5-7 minutes.
  8. Serve the creamy mustard chicken with the steamed vegetables on the side. Garnish with fresh parsley if desired.
