- 1 cup mushrooms, chopped
- 2 cups fresh spinach
- 1/2 cup cream cheese
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
Instructions
- Preheat oven to 375°F (190°C).
- In a pan, heat olive oil and sauté mushrooms, spinach, and garlic until soft.
- Mix in cream cheese, Parmesan, salt, pepper, and thyme.
- Cut a pocket into each chicken breast and stuff with the filling.
- Secure with toothpicks if needed.
- Bake for 25-30 minutes until chicken reaches 165°F (74°C).
- Let rest for 5 minutes before serving.
