Ingredients

  • 4 chicken thighs, skinless and boneless
  • 1 tablespoon olive oil
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon thyme, dried
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken thighs with salt and pepper, then add them to the skillet. Cook until golden brown on both sides, about 5-7 minutes per side. Remove and set aside.
  3. In the same skillet, add sliced mushrooms and sauté until they are golden brown, about 5 minutes.
  4. Add minced garlic and cook for an additional minute until fragrant.
  5. Pour in the chicken broth and bring to a simmer. Scrape up any browned bits from the bottom of the skillet.
  6. Stir in the heavy cream and thyme. Let the sauce simmer until it thickens slightly, about 3-5 minutes.
  7. Return the chicken thighs to the skillet, coating them in the sauce. Cook for an additional 5 minutes to heat through.
  8. Garnish with fresh parsley before serving.

Notes

  • Feel free to use other types of mushrooms like cremini or shiitake.
  • For added flavor, you can deglaze the pan with white wine before adding the chicken broth.
