- 4 chicken thighs, skinless and boneless
- 1 tablespoon olive oil
- 1 cup mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon thyme, dried
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken thighs with salt and pepper, then add them to the skillet. Cook until golden brown on both sides, about 5-7 minutes per side. Remove and set aside.
- In the same skillet, add sliced mushrooms and sauté until they are golden brown, about 5 minutes.
- Add minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth and bring to a simmer. Scrape up any browned bits from the bottom of the skillet.
- Stir in the heavy cream and thyme. Let the sauce simmer until it thickens slightly, about 3-5 minutes.
- Return the chicken thighs to the skillet, coating them in the sauce. Cook for an additional 5 minutes to heat through.
- Garnish with fresh parsley before serving.
Notes
- Feel free to use other types of mushrooms like cremini or shiitake.
- For added flavor, you can deglaze the pan with white wine before adding the chicken broth.
