- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 tsp garlic powder
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 can diced tomatoes (14 oz)
- 1 cup chopped spinach
- 1/2 cup shredded mozzarella cheese
Instructions
- Mix ground beef, breadcrumbs, Parmesan, egg, garlic powder, basil, oregano, salt, and pepper in a bowl.
- Form into small meatballs (about 1-inch diameter).
- Heat olive oil in a large pot over medium heat. Brown meatballs for 5 minutes, then remove.
- Add onion and garlic to the pot. Cook until soft, about 3 minutes.
- Pour in chicken broth, diced tomatoes, and heavy cream. Bring to a simmer.
- Return meatballs to the pot. Cook for 15 minutes.
- Add spinach and cook for 2 more minutes.
- Top with mozzarella cheese before serving.
Notes
- Use lean ground beef for less grease.
- Fresh herbs can replace dried ones.
- Adjust creaminess by adding more or less heavy cream.
