- 1 lb (450g) shrimp, peeled and deveined
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 2 cups fresh spinach
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 1 tbsp lemon juice
- 2 tbsp grated Parmesan cheese
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add shrimp and cook for 2 minutes per side, then remove and set aside.
- In the same skillet, add garlic and sauté for 30 seconds until fragrant.
- Pour in chicken broth and heavy cream, stirring well.
- Add spinach, salt, black pepper, and red pepper flakes. Cook until spinach wilts.
- Return shrimp to the skillet and stir in lemon juice and Parmesan cheese.
- Simmer for 2 minutes until shrimp is fully cooked and sauce thickens slightly.
- Serve warm over pasta, rice, or with crusty bread.
Notes
- Use fresh or frozen shrimp—just ensure they’re thawed if frozen.
- Adjust seasoning to taste.
- For a lighter version, substitute half-and-half for heavy cream.
