Description

A quick and easy dish featuring succulent shrimp in a creamy garlic sauce, served with buttery rice and roasted asparagus.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup long-grain rice
  • 2 cups water
  • 1 tbsp butter (for rice)
  • 1 bunch asparagus, trimmed
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F. Toss asparagus with olive oil, salt, and pepper. Roast for 12-15 minutes.
  2. Cook rice in water with 1 tbsp butter until done. Set aside.
  3. In a skillet, melt 2 tbsp butter over medium heat. Add garlic and cook for 1 minute.
  4. Add shrimp and cook until pink, about 3-4 minutes.
  5. Pour in heavy cream and simmer for 2-3 minutes until sauce thickens.
  6. Season with salt and pepper. Serve shrimp over rice with roasted asparagus.
