Description

Ingredients

  • 2 boneless chicken breasts
  • 1 cup sliced mushrooms
  • 3 cloves garlic, minced
  • 2 medium potatoes, diced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 tbsp basil pesto
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat. Cook chicken until golden brown, then set aside.
  2. In the same pan, melt butter and sauté garlic and mushrooms until soft.
  3. Add diced potatoes and cook until tender.
  4. Pour in heavy cream and bring to a simmer.

  6. Return chicken to the pan and coat with the sauce.
  7. Top with basil pesto before serving.
