  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Cooked rice or naan for serving

Instructions

  1. In a large skillet or pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and sauté until softened, about 5 minutes.
  3. Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
  4. Add the chicken pieces to the skillet and cook until browned on all sides, about 5-7 minutes.
  5. Sprinkle in the curry powder, ground cumin, and turmeric, stirring well to coat the chicken and onion mixture.
  6. Pour in the coconut milk and chicken broth, then stir in the soy sauce and brown sugar.
  7. Bring the mixture to a simmer, reduce the heat to low, and cover. Let it cook for about 20-25 minutes, or until the chicken is cooked through and tender.
  8. Season with salt and pepper to taste.
