- 2 tablespoons vegetable oil

- 3 cloves garlic, minced

- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric
- 1 can (14 oz) coconut milk
- 1 cup chicken broth
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- Salt and pepper to taste
- Fresh cilantro for garnish
- Cooked rice or naan for serving
Instructions
- In a large skillet or pot, heat the vegetable oil over medium heat.
- Add the chopped onion and sauté until softened, about 5 minutes.
- Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the chicken pieces to the skillet and cook until browned on all sides, about 5-7 minutes.
- Sprinkle in the curry powder, ground cumin, and turmeric, stirring well to coat the chicken and onion mixture.
- Pour in the coconut milk and chicken broth, then stir in the soy sauce and brown sugar.
- Bring the mixture to a simmer, reduce the heat to low, and cover. Let it cook for about 20-25 minutes, or until the chicken is cooked through and tender.
- Season with salt and pepper to taste.
- Serve the curry over cooked rice or with naan, garnished with fresh cilantro.
