This creamy clam chowder is a comforting and delicious soup packed with tender clams, potatoes, and a rich, creamy base.

- 4 slices of bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups diced potatoes
- 1 cup celery, diced
- 1 cup carrots, diced
- 3 cups clam juice
- 2 cans (6.5 oz each) chopped clams, drained
- 1 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
- Add the diced onion, garlic, celery, and carrots to the pot. Sauté until the vegetables are tender, about 5-7 minutes.
- Add the diced potatoes and clam juice to the pot. Bring to a simmer and cook until the potatoes are tender, about 15 minutes.
- Stir in the chopped clams, heavy cream, dried thyme, and the reserved bacon. Simmer for an additional 5 minutes.
- Season with salt and pepper to taste. Serve hot, garnished with fresh parsley if desired.
Notes
- For a thicker chowder, you can mash some of the potatoes before adding the cream.
- Feel free to add other vegetables such as corn or green beans for added flavor and nutrition.
