Ingredients

- 1 lb boneless, skinless chicken breasts, cubed
- 2 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp dried Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 cups chicken broth
- 1 cup heavy cream
- 9 oz cheese tortellini
- 2 cups baby spinach
- 1/2 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken and cook until browned, about 5 minutes.
- Stir in onion, garlic, Italian seasoning, salt, and pepper. Cook for 2 minutes.
- Pour in chicken broth and heavy cream. Bring to a simmer.
- Add tortellini and cook for 5 minutes.
- Stir in spinach and cook until wilted, about 2 minutes.
- Sprinkle with Parmesan cheese before serving.
Notes
- You can use frozen tortellini if fresh is not available.
- Substitute half-and-half for a lighter option.
- Store leftovers in an airtight container for up to 2 days.
