Ingredients

- 2 tbsp butter
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 lb chicken breast, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp thyme
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp flour (optional, for thickening)
Instructions
- Melt butter in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes until softened.
- Stir in garlic and cook for 1 minute.
- Add diced chicken and cook until no longer pink.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
- Stir in heavy cream, thyme, salt, and pepper.
- If needed, mix flour with 2 tbsp water and stir into the soup to thicken.
- Simmer for 5 more minutes, then serve hot.
Notes
- Use rotisserie chicken for a quicker version.
- Substitute milk for heavy cream if desired.
- Add cooked pasta or rice for extra heartiness.
