Ingredients

  • 2 tbsp butter
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 lb chicken breast, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp flour (optional, for thickening)

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Add diced chicken and cook until no longer pink.
  5. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  6. Stir in heavy cream, thyme, salt, and pepper.
  7. If needed, mix flour with 2 tbsp water and stir into the soup to thicken.
  8. Simmer for 5 more minutes, then serve hot.
