Ingredients

  • 2 boneless chicken breasts, diced
  • 1 cup Arborio rice
  • 4 cups chicken broth
  • 1/2 cup grated parmesan cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 cup white wine (optional)
  • 1 tbsp butter
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pan and sauté onions for 2 minutes until soft.
  2. Add garlic and cook for another minute.
  3. Add diced chicken and cook until browned, about 5 minutes.
  4. Stir in Arborio rice and coat it with oil for 1 minute.
  5. Pour in white wine (if using) and let it evaporate.
  6. Begin adding chicken broth, one ladle at a time, stirring frequently until absorbed.
  7. Continue adding broth and stirring until rice is creamy and al dente (about 20 minutes).
  8. Stir in parmesan cheese and butter until melted.
  9. Season with salt and pepper.
  10. Garnish with fresh parsley and serve hot.
