- 2 boneless, skinless chicken breasts, cut into strips
- 8 oz mushrooms, sliced
- 2 cups fresh spinach
- 1/2 cup heavy cream
- 1/2 cup chicken broth
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken strips, season with paprika, salt, and pepper. Cook until golden, about 5-6 minutes.
- Remove chicken and set aside. In the same skillet, add mushrooms and garlic. Cook until mushrooms soften, about 3-4 minutes.
- Pour in chicken broth and heavy cream. Stir well and simmer for 2 minutes.
- Add spinach and cooked chicken back to the skillet. Stir until spinach wilts and sauce thickens, about 2-3 minutes.
- Serve hot.
Notes
- Use fresh spinach for best texture.
- Adjust creaminess by adding more or less broth.
- Substitute chicken thighs for a richer flavor.
