- 1/2 cup protein powder (vanilla or blueberry flavor)
- 1/4 cup cream cheese (softened)
- 1/2 cup blueberries (fresh or frozen)
- 1/4 cup honey or maple syrup
- 1/4 cup coconut flour
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a large mixing bowl, combine rolled oats, protein powder, coconut flour, and salt.
- In another bowl, mix together the cream cheese, honey (or maple syrup), lemon juice, and vanilla extract until smooth.
- Add the wet ingredients to the dry ingredients and mix until well combined.
- Gently fold in the blueberries, being careful not to crush them.
- Using your hands, roll the mixture into small balls, about 1 inch in diameter.
- Place the energy balls on a parchment-lined baking sheet.
- Refrigerate for at least 30 minutes to set.
