- 1 lb ground meat (beef, turkey, or chicken)
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 egg
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup cranberry sauce
- 1/4 cup balsamic vinegar
- 1 tbsp olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the ground meat, breadcrumbs, Parmesan cheese, parsley, egg, salt, and pepper.
- Mix the ingredients just until combined, being careful not to overmix.
- Form the mixture into meatballs, about 1 inch in diameter.
- Place the meatballs on a baking sheet lined with parchment paper.
- Bake the meatballs in the preheated oven for 20-25 minutes, or until cooked through.
- While the meatballs are baking, prepare the glaze by combining cranberry sauce and balsamic vinegar in a saucepan over medium heat.
- Bring the glaze to a simmer and cook for 5-7 minutes, stirring occasionally.
- Once the meatballs are done baking, remove them from the oven and toss them in the cranberry balsamic glaze.
- Serve the meatballs warm, garnished with additional parsley if desired.
Notes
- Chill the meatballs in the refrigerator for at least 30 minutes before cooking to help them hold their shape.
