Ingredients

  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 cup mushrooms, sliced
  • 1 cup spinach, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, bring vegetable broth to a boil.
  3. Add quinoa, reduce heat, and simmer for 15 minutes.
  4. In a skillet, heat olive oil over medium heat.
  5. Add onion, carrots, and celery. Cook until softened.
  6. Add garlic, thyme, and rosemary. Stir for 1 minute.
  7. Add mushrooms and cook until soft.
  8. Stir in spinach until wilted.
  9. Combine vegetable mixture with quinoa. Season with salt and pepper.
  10. Serve warm.
