- 2 cups of quinoa
- 1 can of black beans, drained
- 1 red bell pepper, diced
- 1 cup of corn, frozen or fresh
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- Salt to taste
- 1 avocado, sliced
- Fresh cilantro for garnish
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa with 4 cups of water and bring to a boil.
- Reduce heat and let it simmer for about 15 minutes until water is absorbed.
- In a large bowl, mix black beans, bell pepper, corn, cumin, paprika, and salt.
- Add the cooked quinoa to the vegetable mixture and stir well.
- Serve topped with avocado slices and cilantro.
Notes
- Feel free to add any other vegetables you like.
- This dish can be made ahead and stored in the fridge.
