Ingredients

  • Salt to taste
  • 1 avocado, sliced
  • Fresh cilantro for garnish

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa with 4 cups of water and bring to a boil.
  3. Reduce heat and let it simmer for about 15 minutes until water is absorbed.
  4. In a large bowl, mix black beans, bell pepper, corn, cumin, paprika, and salt.
  5. Add the cooked quinoa to the vegetable mixture and stir well.
  6. Serve topped with avocado slices and cilantro.
