A refreshing and healthy couscous salad packed with vegetables and flavors.
Ingredients

- 1 cup couscous
- 1 1/4 cups water
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Boil water in a pot.
- Add couscous to boiling water and remove from heat.
- Cover and let it stand for 5 minutes.
- Fluff couscous with a fork.
- In a large bowl, combine cucumber, bell pepper, cherry tomatoes, red onion, and parsley.
- Add couscous to the vegetable mixture.
- Drizzle with olive oil and lemon juice.
- Season with salt and pepper.
- Toss well to combine.
- Serve chilled or at room temperature.

- Customize with your favorite vegetables.
- Add feta cheese for extra flavor.
- Can be made ahead of time and stored in the refrigerator.
