Ingredients

  • 1 cup couscous
  • 1 1/4 cups water
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Boil water in a pot.
  2. Add couscous to boiling water and remove from heat.
  3. Cover and let it stand for 5 minutes.
  4. Fluff couscous with a fork.
  5. In a large bowl, combine cucumber, bell pepper, cherry tomatoes, red onion, and parsley.
  6. Add couscous to the vegetable mixture.
  7. Drizzle with olive oil and lemon juice.
  8. Season with salt and pepper.
  9. Toss well to combine.
  10. Serve chilled or at room temperature.
