Description

- 3 lbs corned beef brisket
- 4 cups water
- 2 tablespoons pickling spice
- 1 onion, quartered
- 3 carrots, chopped
- 3 potatoes, quartered
Instructions
- Rinse the corned beef under cold water.
- Place the corned beef in a large pot.
- Add water and pickling spice.
- Bring to a boil, then reduce heat to a simmer.
- Cover and cook for 2.5 to 3 hours.
- Add onion, carrots, and potatoes for the last 30 minutes of cooking.
- Remove the meat and let it rest before slicing.

- Serve with mustard or horseradish.
- Leftovers are great in sandwiches.
