A simple and hearty corned beef recipe made in a slow cooker.
Ingredients

- 3–4 pounds corned beef brisket
- 4 cups beef broth
- 2 cups carrots, cut into chunks
- 1 onion, quartered
- 2 cups potatoes, cut into chunks
- 1 tablespoon mustard seeds
- 1 tablespoon black peppercorns
- 2 bay leaves
Instructions
- Place the corned beef brisket in the slow cooker.
- Add the beef broth, mustard seeds, peppercorns, and bay leaves on top.
- Layer the carrots, onion, and potatoes around the brisket.
- Cover and cook on low for 8-10 hours or until the meat is tender.
- Remove the brisket, slice, and serve with vegetables.
Notes
- For extra flavor, add garlic cloves.
- Serve with mustard or horseradish.
- Leftovers can be used in sandwiches.
