A simple recipe to use corned beef leftovers.
Ingredients

- 2 cups corned beef, shredded
- 1 cup cabbage, chopped
- 1 cup potatoes, diced
- 1 onion, chopped
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add onion and sauté until translucent.
- Add potatoes and cook until tender.
- Add cabbage and corned beef, stir well.
- Season with salt and pepper.
- Cook for 5 more minutes until heated through.

- This dish can be served with eggs for breakfast.
- Leftovers can be stored in the fridge for up to 3 days.
