Ingredients

- 3 pounds corned beef brisket
- 1 head of cabbage, quartered
- 4 large carrots, cut into chunks
- 6 potatoes, quartered
- 1 onion, quartered
- 2 teaspoons black peppercorns
- 2 bay leaves
- Water, as needed
Instructions
- Place the corned beef in a large pot and cover with water.
- Add peppercorns, bay leaves, and onion.
- Bring to a boil, then reduce heat and simmer for 2.5 to 3 hours.
- Add carrots and potatoes to the pot.
- Simmer for another 30 minutes.
- Add cabbage and cook for an additional 15-20 minutes until tender.
- Remove the meat and vegetables; slice and serve.
Notes
- Serve with mustard for extra flavor.
- Leftovers can be used in sandwiches.
