A quick and easy recipe for tender corned beef and flavorful cabbage made in the Instant Pot. Perfect for St. Patrick’s Day or any comforting meal.

- 3–4 pounds corned beef brisket
- 1 tablespoon mustard seeds
- 1 tablespoon black peppercorns
- 1 tablespoon coriander seeds
- 1 onion, quartered
- 4 garlic cloves, minced
- 4 cups beef broth
- 4–5 medium potatoes, quartered
- 4 carrots, cut into large chunks
- 1 small head of cabbage, cut into wedges
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Place the corned beef brisket in the Instant Pot. Sprinkle mustard seeds, black peppercorns, and coriander seeds over the meat.
- Add the quartered onion and minced garlic to the pot.
- Pour in the beef broth, ensuring the brisket is mostly submerged.
- Close the lid and set the Instant Pot to manual high pressure for 90 minutes.
- Once the cooking time is complete, allow for a natural pressure release for about 15 minutes before doing a quick release for any remaining pressure.
- Carefully remove the corned beef and set it aside to rest.
- Add the quartered potatoes and carrot chunks to the broth in the pot. Close the lid and set to manual high pressure for 5 minutes.
- After cooking, do a quick release and add the cabbage wedges. Close the lid again and set for 3 minutes.
- Once done, perform a quick release and carefully remove the cabbage.
- Slice the corned beef against the grain and serve with the vegetables. Garnish with fresh parsley if desired.
Notes
- For extra flavor, you can add bay leaves or a splash of apple cider vinegar to the broth.
- Adjust the cooking time for the corned beef based on the size of the brisket; larger pieces may need additional time.
