A quick and easy recipe for tender corned beef and flavorful cabbage made in the Instant Pot. Perfect for St. Patrick’s Day or any comforting meal.


Ingredients

  • 34 pounds corned beef brisket
  • 1 tablespoon mustard seeds
  • 1 tablespoon black peppercorns
  • 1 tablespoon coriander seeds
  • 1 onion, quartered
  • 4 garlic cloves, minced
  • 4 cups beef broth
  • 45 medium potatoes, quartered
  • 4 carrots, cut into large chunks
  • 1 small head of cabbage, cut into wedges
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Place the corned beef brisket in the Instant Pot. Sprinkle mustard seeds, black peppercorns, and coriander seeds over the meat.
  2. Add the quartered onion and minced garlic to the pot.
  3. Pour in the beef broth, ensuring the brisket is mostly submerged.
  4. Close the lid and set the Instant Pot to manual high pressure for 90 minutes.
  5. Once the cooking time is complete, allow for a natural pressure release for about 15 minutes before doing a quick release for any remaining pressure.
  6. Carefully remove the corned beef and set it aside to rest.
  7. Add the quartered potatoes and carrot chunks to the broth in the pot. Close the lid and set to manual high pressure for 5 minutes.
  8. After cooking, do a quick release and add the cabbage wedges. Close the lid again and set for 3 minutes.
  9. Once done, perform a quick release and carefully remove the cabbage.
  10. Slice the corned beef against the grain and serve with the vegetables. Garnish with fresh parsley if desired.

Notes

  • For extra flavor, you can add bay leaves or a splash of apple cider vinegar to the broth.
  • Adjust the cooking time for the corned beef based on the size of the brisket; larger pieces may need additional time.
