Description
A hearty and flavorful dish made with corned beef and cabbage cooked slowly in a crock pot.
Ingredients

- 3–4 lbs corned beef brisket
- 1 large head of cabbage, quartered
- 4 large carrots, peeled and cut into chunks
- 4 large potatoes, quartered
- 1 onion, quartered
- 4 cups beef broth
- 2 tablespoons mustard
- 1 tablespoon black pepper
- 2 bay leaves
Instructions
- Place the corned beef in the crock pot.
- Add the carrots, potatoes, and onion around the beef.
- Mix beef broth, mustard, and black pepper in a bowl.
- Pour the mixture over the beef and vegetables.
- Add the bay leaves on top.
- Cover and cook on low for 8-10 hours.
- Add cabbage in the last 2 hours of cooking.
- Remove the beef and let it rest before slicing.
- Serve with vegetables and broth.
Notes
- Adjust seasoning to taste.
- Leftovers can be stored in the fridge for up to 3 days.
- Best served with mustard or horseradish.
