A creamy and delicious corn pudding casserole that’s perfect for any gathering or family dinner.

- 2 cans (15 oz each) whole kernel corn, drained
- 1 can (15 oz) creamed corn
- 1 cup milk
- 1/2 cup butter, melted
- 1 cup sugar
- 1 cup cornmeal
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs, beaten
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the whole kernel corn, creamed corn, milk, and melted butter.
- Stir in the sugar, cornmeal, baking powder, salt, and black pepper until well mixed.
- Add the beaten eggs and mix until fully incorporated.
- Pour the mixture into a greased 9×13 inch baking dish.
- Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Allow to cool slightly before serving.
Notes
- For a sweeter version, you can increase the sugar to 1 1/4 cups.
- Add jalapeños or cheese for a spicy or cheesy twist.
- This dish can be made ahead of time and reheated before serving.
