A creamy and delicious corn chowder perfect for a cozy meal.
Ingredients

- 4 cups fresh corn kernels (about 6 ears of corn)
- 1 cup diced potatoes
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
- Chopped chives for garnish (optional)
Instructions
- In a large pot, melt butter over medium heat. Add the diced onion and garlic, and sauté until softened.
- Add the diced potatoes and corn kernels, stirring for 2-3 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until the potatoes are tender, about 15 minutes.
- Stir in the heavy cream and season with salt and pepper. Cook for an additional 5 minutes.
- Serve hot, garnished with chopped chives if desired.
Notes
- For a thicker chowder, blend a portion of the soup and stir it back in.
- Feel free to add cooked bacon or ham for extra flavor.
