Description

A creamy and delicious corn chowder perfect for a cozy meal.

Ingredients

Scale
  • 4 cups fresh corn kernels (about 6 ears of corn)
  • 1 cup diced potatoes
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Chopped chives for garnish (optional)

Instructions

  1. In a large pot, melt butter over medium heat. Add the diced onion and garlic, and sauté until softened.
  2. Add the diced potatoes and corn kernels, stirring for 2-3 minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until the potatoes are tender, about 15 minutes.
  4. Stir in the heavy cream and season with salt and pepper. Cook for an additional 5 minutes.
  5. Serve hot, garnished with chopped chives if desired.

Notes

  • For a thicker chowder, blend a portion of the soup and stir it back in.
