Ingredients

Scale
  • 2 cups corn kernels (fresh, frozen, or canned)
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/2 cup melted butter
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped onion
  • 1 cup cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon garlic powder (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the corn kernels, sour cream, milk, melted butter, and shredded cheddar cheese. Mix well.
  3. In a separate bowl, whisk together the cornmeal, baking powder, salt, black pepper, and garlic powder (if using).
  4. Gradually add the dry ingredients to the wet mixture, stirring until fully combined.
  5. Pour the mixture into a greased 9×13 inch baking dish.
  6. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Allow to cool slightly before serving. Enjoy your corn casserole!

Notes

  • For added flavor, consider mixing in some cooked bacon or jalapeños.
  • You can substitute the cheddar cheese with your favorite cheese or omit it for a dairy-free version.
