- 1 box Jiffy corn muffin mix
- 1 can (15 oz) whole kernel corn, drained
- 1 can (15 oz) cream-style corn
- 1 cup sour cream
- 1/2 cup melted butter
- 1 cup shredded cheddar cheese (optional)
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the Jiffy corn muffin mix, whole kernel corn, cream-style corn, sour cream, and melted butter.
- Mix until well combined. If desired, stir in shredded cheddar cheese.
- Season with salt and pepper to taste.
- Pour the mixture into a greased 9×13 inch baking dish.
- Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Let cool for a few minutes before serving.
Notes
- For a spicier version, add diced jalapeños or green chilies.
- You can substitute Greek yogurt for sour cream for a healthier option.
