- 1 can (15 oz) whole kernel corn, drained
- 1 can (15 oz) creamed corn
- 1 cup sour cream
- 1/2 cup unsalted butter, melted
- 1 cup cornmeal
- 1 cup shredded cheddar cheese
- 1/4 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the whole kernel corn, creamed corn, sour cream, and melted butter. Mix well.
- Add in the cornmeal, shredded cheddar cheese, sugar, baking powder, and salt. Stir until all ingredients are well combined.
- Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly.
- Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Remove from the oven and let it cool for a few minutes before serving.
Notes
- For a spicy kick, add diced jalapeños or green chilies to the mixture.
- You can substitute the cheddar cheese for your favorite cheese, such as Monterey Jack or pepper jack.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
