This easy corn casserole made with Jiffy mix is a family favorite! It’s sweet, creamy, and the perfect side dish for any meal.

- 1 box Jiffy Corn Muffin Mix
- 1 can (15 oz) sweet corn, drained
- 1 can (15 oz) creamed corn
- 1 cup sour cream
- 1/2 cup melted butter
- 1 cup shredded cheddar cheese (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the Jiffy Corn Muffin Mix, sweet corn, creamed corn, sour cream, melted butter, and half of the cheddar cheese (if using). Stir until well combined.
- Pour the mixture into a greased 9×13 inch baking dish.
- Sprinkle the remaining cheddar cheese on top (if using).
- Bake for 45 minutes or until the top is golden brown and the casserole is set.
- Allow to cool for a few minutes before serving.
Notes
- You can add diced jalapenos for a spicy kick.
- This casserole can be made ahead of time and refrigerated before baking.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days.
