- 1 can (15 oz) sweet corn, drained
- 1 can (15 oz) cream-style corn
- 1 box (8.5 oz) cornbread mix
- 1 cup sour cream
- 1/2 cup melted butter
- 1 cup shredded cheese (cheddar or your choice)
- 1/4 cup chopped green onions (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the sweet corn, cream-style corn, cornbread mix, sour cream, and melted butter. Mix until well combined.
- Fold in the shredded cheese and chopped green onions, if using. Season with salt and pepper to taste.
- Pour the mixture into a greased 9×13 inch baking dish.
- Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the casserole is set.
- Let it cool for a few minutes before serving. Enjoy your corn casserole!
Notes
- Add jalapeños for a spicy kick.
- Top with additional cheese during the last 10 minutes of baking for a cheesy crust.
